A 21 Day Autumn Cleanse & Health Reset Recipe
Chimichurri is a vibrant green and flavourful sauce that originated in Argentina and Uruguay, where it is a staple condiment in traditional cuisine. This zesty green sauce is typically served alongside grilled meats, adding brightness and depth of flavour to dishes.
The exact origins of chimichurri are somewhat debated, but it is widely believed to have been created by Argentine gauchos, or cowboys, who roamed the pampas (grassy plains) of Argentina and Uruguay in the 19th century. Legend has it that the name "chimichurri" is derived from the Basque word "tximitxurri," which means "a mixture of several things in no particular order," reflecting the improvisational nature of the sauce.
Chimichurri sauce is made from a blend of fresh ingredients, typically including chopped parsley, garlic, oregano, red pepper flakes, vinegar, and olive oil. The sauce may also incorporate additional herbs and spices, such as coriander, thyme, or paprika, depending on regional variations and personal preferences.

Chimichurri
Organic ingredients:
4 cloves of garlic
1 cup parsley, roughly chopped
1 cup coriander, roughly chopped
1 teaspoon dried oregano or use our Tuscan Blend by Apotheca (oregano leaf, basil leaf, marjoram leaf, and garlic granules)
1 small red chili
1 shallot or ½ cup Spanish onion
1/2 cup extra virgin olive oil
1 lemon, juice and zest
Natural salt and pepper, to taste
Method:
In a high-speed blender, add the chopped garlic, parsley, coriander, dried oregano, red chili, shallot or Spanish onion, olive oil, lemon juice, natural salt, and freshly cracked black pepper.
Pulse the ingredients until they are mixed but not fully pureed into a sauce. You want the ingredients to retain some texture.
Transfer the chimichurri sauce to a clean, airtight jar.
Store the chimichurri sauce in the refrigerator for up to 3 days, or freeze it for later use.
Your chimichurri sauce is now ready to be served as a dressing over plain vegetables, eggs, and grilled meat, chicken, fish and seafood. You can also use it as a marinade for meat, poultry, pork, fish and seafood. It’s also delicious on toast with avocado.
