Recipe: Sunday Cookies with coconut, almond, banana & strawberries
A 21 Day Seasonal Cleanse Favourite
Sunday cookies were born on a Sunday during a 21 Day Seasonal Cleanse & Health Reset when I needed a delicious grain-free and balanced macronutrient snack. One afternoon, I concocted this recipe and then from then onwards, I made so many different variations by swapping out wet and dry mixtures. Below, you will find the basic recipe and this Sunday's combination. Enjoy!

Organic ingredients:
2-3 ripe medium sized bananas, mashed
4 cups almond meal or 2 cups almond meal and 2 cups desiccated coconut
Cinnamon powder
Paraffin-free baking paper
Method:
Preheat your oven to 350°F (175°C) and line a baking sheet with paraffin-free baking paper.
In a mixing bowl, combine the mashed bananas with the almond meal and/or desiccated coconut.
Add the cinnamon powder to the mixture and stir until well combined. The mixture should be moist enough to hold together when formed into balls.
Using a cookie scoop or tablespoon, form the mixture into balls and place them onto the prepared baking sheet.
Gently press each ball with a fork to flatten it slightly and create a nice design.
Bake the cookies for 15-20 minutes, or until the edges are golden brown.
Remove the cookies from the oven and let them cool on the baking sheet for 10 minutes.
Transfer the cooled cookies to a wire rack to cool completely.
Store the cookies in an airtight container in the refrigerator for up to 3 days.
Sunday Cookies Alternative Ingredients
Mix and match ingredients from the wet and dry mixtures to create your own unique flavour combinations. Get creative and try new flavours to make your own delicious creation.
Wet Mixture:
Whole, raw egg or egg white
Nut butter (almond, macadamia)
Grated pear, apple, carrot, or zucchini
Mashed berries or mashed cooked pumpkin or sweet potato
Monk fruit syrup
Rose floral water or orange floral water
Hulled tahini
Dry Mixture:
Crushed nuts (almonds, walnuts, pecans)
Sesame seeds, poppy seeds, chia seeds
Slippery elm powder
Additive-free protein powder
Cacao powder, carob powder, cacao or carob nibs
Natural salt flakes
Spices (vanilla, stevia, nutmeg, ginger)
Lioness (dandelion chai spice powder) or Golden Latte Powders (turmeric, cinnamon, ginger & black peper powder) by Apotheca
Today’s Sunday Combo:
2 cups almond meal
2 cups desiccated coconut ( I never use coconut flour - they become too dense)
1 egg white
3 mashed strawberries
2 mashed bananas
1/4 teaspoon vanilla powder
